Turkish Lahmacun Pizza

At the Saltbox Farm , we made Lahmacun, which is one delicious twist on pizza. This pizza-like, thin, round dish, topped with herbs and minced meat (also known as Armenian Pizza, Turkish Pizza, Lahmajun and Lahmajoon) is very famous in Armenia and Turkey. Once the Lahmacun’s are out of the oven, top it off with some fresh lemon juice, and you have yourself one mouth watering treat!

Homemade Turkish Lahmacun pizza with ground lamb, topped with fresh lemon juice

This is a great flatbread recipe in preparation for making flatbread pizzas, such as Lahmacun Turkish or Armenian pizzas.
Ingredients
  • All Purpose Flatbread
  • 2 1⁄2 cups flour
  • 1 1⁄4 cup water
  • 1 1⁄2 tsp yeast
  • 1 1⁄2 tsp kosher salt
  • 1 1⁄2 tsp pepper
  • 1 T honey
  • 1 T olive oil
Instructions
  1. All Purpose Flatbread:
  2. Mix all dry ingredients in a stainless steel bowl using a fork or a whisk, and make a well
  3. in the center. Next pour the honey, olive oil and water in the well and mix with a wooden
  4. spoon until just combined. You may also do this in the bowl of a stand mixture fitted with
  5. the dough hook; mix on low speed for 3 minutes until dough comes together. It should
  6. feel tacky but not wet.
  7. Place the dough in an oiled bowl and cover; let rise and double in size. Turn dough out
  8. onto a floured board and cut into 1-oz pieces. Form balls with each piece and place on
  9. a floured sheet tray. Allow the dough to rest five to ten minutes in order to relax the
  10. gluten. Keep covered with a moist towel.
  11. Roll out each ball to desired thickness (using more flour if necessary, if dough is sticky).
  12. Cook each flatbread individually (or no more than two at a time) in a hot skillet with a
  13. little olive oil or over a hot charcoal grill until nicely browned, about 4 minutes each side.
  14. Note: The slower the rise of the dough, the more complex that wonderful yeasty flavor.
  15. Ideally start the dough the day before, and place the bowl in the fridge overnight for the
  16. first rise. Pull out the dough about an hour before you are ready to use and let come to
  17. room temperature, then form balls and continue as outlined above.

Turkish Pizza is a delicious, savory, flavorful flatbread made of lamb, tomatoes, onions, herbs and spices, topped with fresh lemon juice
Ingredients
  • 1X Recipe All Purpose Flatbread
  • 1⁄4 cup olive oil
  • 3 tbsp tomato Paste
  • 2 tbsp chopped Parsley
  • 1⁄2 tsp chili flakes, cayenne, or Aleppo Pepper
  • 1⁄4 tsp ground cumin
  • 1⁄4 tsp sweet paprika
  • ⅛ tsp cinnamon
  • 1⁄2 # ground lamb
  • 2 cloves garlic minced and salted
  • 1 plum tomato, grated
  • 1 small onion, grated
  • 1.2 fresh chili stemmed and seeded and minced
Instructions
  1. Method:
  2. Prepare dough according to recipe.
  3. For the Topping:
  4. Pulse all ingredients except for lamb til combined, add lamb and pulse til well mixed.
  5. Roll out dough balls thinly and press lamb mixture into dough all the way to the edges.
  6. Bake on a parchment lined sheet pan or on a pizza stone in a 450-degree oven.
  7. Serve with salad, yogurt, and a wedge of fresh lemon.
