Eggs in Purgatory

I really like mornings when you get out of bed and already have a dinner plan.  On this morning, it was my wife who laid it it all out. The yellow sticky note on the kitchen stated a request for eggs in purgatory, so eggs in hell it would be. Dipping warm, crusty bread in sunny side up eggs, surrounded by a flavorful marinara sauce. What’s not to love! After all, does it make you a sinner if you want eggs for dinner?

Eggs in Purgatory

Step 1: ingredients (spinach, tomato sauce, olive oil, basil, eggs, parmesan cheese, olive oil, bread)

Step 2: bring tomato sauce to simmer and stir in spinach til wilted

Step 3: crack 2 eggs in four shallow indentations in surface of sauce, cover and see you in five minutes

Step 4 last step: once eggs set, take off heat sprinkle fresh torn basil and grated parm, use fresh bread to dip AKA the “Italian spoon”
