Made Kreatosoupa (Greek Beef noodle soup), my yia yia’s recipe. The soup is hearty, with rich beef, tomato, and Greek flavors. It takes time to prepare, so enjoy the process and definitely make it on a weekend.
Ingredients
Ingredients:
4 Pounds of Beef Brisket (not a lot of fat)
4 short ribs meat with bones
1 large beef Marrow Bone
1 Bag Carrots, peeled and cut into chunks
1 whole Onion, cut into quarters
Red Potatoes 1 Lb, peeled
2 Stalks for Celery, cut into chunks
Beef Stock 2 - 32 Oz containers
1 Large Can of San Marzano whole tomatoes 32 oz (crush with hands)
Angel Hair Noodles
Salt Pepper
Bay Leaf
Lemon
Instructions
Cut the brisket in half against the grain
Put all the beef in stock pot and fill with cold water
Medium heat, let it come to slight boil and skim the fat with a slotted spoon
Add salt and pepper and a bay leaf
Let it cook for three hours
Take out the beef and strain the broth through a strainer into another pot
Put the beef on a platter
In new pot, Add carrots, onion, celery, potatoes to the strained broth and cook vegetables for about fifteen minutes, when potatoes are tender
Take out the vegetables and add to platter with meat
At the end throw in noodles into broth cook for 5 minutes (optional: cook angel hair separately and add a portion cooked pasta to each individual bowl)
Serve the platter of beef and vegetables and into the soup, squeeze fresh lemon juice into your bowl of soup.
