Slow Cooked Roast Chicken

I made roast chicken in a slow cooker, 8 hrs on low - pretty easy, very tasty.
Ingredients
  • 1 Bag of Carrots, peeled, chopped
  • 4 Celery Hearts, chopped
  • 1 bag yellow or red potatoes, peeled, cut into 1 to 2 inch pieces
  • 1 onion halved
  • 1 whole chicken 4 lbs give or take a pound
  • 4 tsp salt
  • ½ tsp cayenne pepper
  • 1 tsp paprika
  • 1 TB of chopped fresh thyme (dried is ok)
  • 2 tsp ground black pepper
  • 2 TB crushed garlic
  • 1 lemon halved
  • 1 five cloves garlic
  • 2 TB butter
Instructions
  1. pat dry chicken inside and out
  2. massage butter onto chicken skin
  3. in glass bowl mix dry ingredients, garlic and thyme together and massage onto chicken
  4. put half lemon, garlic, half onion, and thyme into cavity
  5. Add vegetables (half onion, carrots, celery, potatoes) at the bottom of slow cooker
  6. Place chicken on top of veggies
  7. Set slow cooker to low for 8 hours
  8. take out chicken and make sure temperature between breast and leg is at least 160 degrees
  9. Let chicken sit for ten minutes
  10. Carve chicken, serve with veggies
  11. Enjoy
