Al Dente Farfalletti Pasta with Zucchini and Chicken

Al Dente pasta company put out a new line of pastas. The farfalleti comes with a recipe on the back of the bag and I really enjoyed it. The little bowtie pasta shapes are fun and easy to eat - and the recipe was flavorful with the added garlic to the oil Enjoy!
Ingredients
  • 1 small or medium sized zucchini sliced
  • 2 cloves garlic minced
  • 3 TB olive oil
  • kosher salt to tasta
  • 2 cups cherry tomatoes halved (about a carton of cherry tomatoes)
  • 1 cup cooking water
  • 1 lemon zest and juice
  • mint or basil to garnish
  • goat cheese or parmesan to garnish
  • 1 bag of Al Dente Farfalletti Pasta
  • 1 chicken breast sauteed and cut into cubes (optional)
Instructions
  1. If you want to add chicken to this dish, first sautee one chicken breast on pan with 2 TB olive oil and cook until internal reaches 165 degrees. Cut up chicken into cubes and put aside.
  2. In a skillet over medium high heat, once add 3 tbsp. olive oil, once pan is hot add minced garlic for a minute, then add kosher salt and saute zucchini until zucchini begins to brown.
  3. Then Add 1 cup tomatoes. and cook until tomatoes begin to wilt, then add chicken and simmer.
  4. Meanwhile boil salted water and Cook pasta for 5 minutes.
  5. Before draining pasta water, ladle ½ cup cooking water into skillet. Add pasta, juice and zest of 1 lemon, fresh mint or basil, goat cheese or parm.
