Want a delicious, healthy alternative to a regular burger and bun? May I present you with a grilled stuffed tomato burger! Toss your bun to the birds. This juicy grilled tomato and rice, veggie stir fry combo makes your burger explode with deliciousness.
Ingredients
1 onion, diced
1 yellow pepper, diced
1 garlic clove, minced
1 anchovy minced
⅛ tsp salt
pepper
2 TB olive oil
½ cup of tomato sauce
1 cup brown rice cooked
4 tomatoes
4⅓ lb. hamburger patties (90% lean)
Grated parmesan cheese
Instructions
hallow out your tomatoes with a knife and cut the tops to use later as lids
reserve the inside tomato flesh and dice
heat olive oil in pan medium heat
add onions, garlic, until translucent,
add yellow pepper and salt, and soften veggies
add anchovies and tomato flesh and its juices and saute another few minutes
add tomato sauce and bring heat to low and stir occassionally about 10 minutes,
bring the heat to simmer stir in the rice and season to taste
Heat up the grill, oil up your grill grates and grill your hollowed out tomatoes and tomato tops on each side for about 1-2 minutes
Meanwhile grill your burgers
Finally, assemble your burgers
Put stuffing into hollow grilled tomatoes, add the burger, and top it off with your grilled tomato top, sprinkle generously with fresh parmesan cheese.
