Another fresh and delicious salsa learned at Saltbox Farm was this flavorful, tangy, salsa recipe. The tomatillos and avocados really bring out some vibrant green colors that contrast beautifully with the Roasted Tomato and Chili Salsa.
- 5 tomatillos
- 1 avocado
- 1⁄2 white onion
- 3 garlic cloves
- 1 tablespoon white vinegar
- 3 tablespoons cilantro, chopped
- Salt to taste
- Remove the paper husk from the tomatilllos and char over a grill or flame. You can also do this in a broiler. Char the onion the same way. Puree all ingredients in a food processor. Taste for seasoning. You may want to add more salt and or vinegar.
