What to do with left over grilled salmon? The next day I made a fresh salad with grilled small yellow potatoes (marinated in garlic, olive oil, salt/pepper), tomatoes, lettuce, artichokes, olives, croutons, and topped it off with salmon. Healthy, delicious.
