Ready for nature’s candy? Try these roasted cinnamon sweet potatoes! Use any leftovers to enhance your smoothies, salads, or just pop them in your mouth!
- 2 sweet potatoes, chopped
- 2 tablespoons coconut oil
- 1 heaping teaspoon cinnamon
- Heat oven to 400º, toss sweet potatoes in the coconut oil and cinnamon and roast for 25 – 30 minutes. Done when fork goes through largest piece w/o resistance.
