Ladyfingers are delicious cookies to eat with tea or coffee, or as part of a tiramisu.
Ingredients
  • 12 egg yolks
  • 4.5oz granulated sugar
  • 13.5 egg whites
  • 7.5oz granulated sugar
  • ⅓ teaspoon lemon juice
  • 15oz pastry flour
Instructions
  1. Whip egg yolks and sugar to pale yellow ribbons
  2. Whip egg whites, lemon juice and sugar to medium soft peaks
  3. Fold yolk mixture into egg white mixture. Carefully fold in the sifted flour as not to deflate.
  4. Using a plain piping tip, pipe 2” long and very close together on a sheet pan
  5. Sift powder sugar over the top and bake at 375 degrees F until very light golden brown
