Once the fall arrives, I love to make some stews! I especially love to make healthy, flavorful stews such as this Italian style chicken stew with fresh Italian flavors. This recipe will leave you happy for two to three days. Enjoy.
Ingredients
1 tablespoon olive oil
Coarse salt and ground pepper
1 Fresh tomato diced
1 can whole san marzano tomatoes in puree (28 ounces)
In a 5-quart slow cooker, add to bottom of the crock pot ½ cup of chicken broth and half the veggies and potatoes, then add chicken, rest of the veggies and potatoes, fresh tomato and tomatoes (with puree), rosemary, and remaining garlic, pour white wine on top and onions, garlic, and juices from skillet, then season top layer with ¼ tsp of salt and ¼ tsp of pepper. Cover; cook on high setting until chicken is fork-tender, about 6 hours (do not uncover while cooking).
Goes well with a side of rice or orzo.
