Italian Style Chicken Stew

Once the fall arrives, I love to make some stews! I especially love to make healthy, flavorful stews such as this Italian style chicken stew with fresh Italian flavors. This recipe will leave you happy for two to three days. Enjoy.
Ingredients
  • 1 tablespoon olive oil
  • Coarse salt and ground pepper
  • 1 Fresh tomato diced
  • 1 can whole san marzano tomatoes in puree (28 ounces)
  • 1 large onion, cut into 8 wedges
  • 2-3 carrots chopped into large chunks
  • 2-3 celery stalks chopped into large chunks
  • ½ cup white wine
  • ½ cup chicken
  • 1 tablespoon fresh rosemary, chopped (or 1 teaspoon dried and crumbled)
  • 3 pounds chicken breasts and chicken thighs
  • 4 garlic cloves, halved lengthwise
  • 1¼ pounds small white potatoes, scrubbed
Instructions
  1. Add olive oil to a large skillet, and over medium heat sauté half of an onion, a few cloves of garlic, and a pinch of salt for a few minutes. While sautéing onions, generously season chicken with 1½ teaspoons salt and 1 teaspoon pepper and then add to skillet. Cook chicken until browned on all sides, about 5 minutes. Then take chicken out and deglaze the pan with a spash of white wine. Take onions and garlic and juices out and save.
  2. In a 5-quart slow cooker, add to bottom of the crock pot ½ cup of chicken broth and half the veggies and potatoes, then add chicken, rest of the veggies and potatoes, fresh tomato and tomatoes (with puree), rosemary, and remaining garlic, pour white wine on top and onions, garlic, and juices from skillet, then season top layer with ¼ tsp of salt and ¼ tsp of pepper. Cover; cook on high setting until chicken is fork-tender, about 6 hours (do not uncover while cooking).
  3. Goes well with a side of rice or orzo.
