I love pasta with pesto, but sometimes it comes out tasting a little bland so I started making a pasta and pesto flavor enhancer; a delicious, healthy pasta sauce with just four simple ingredients, cherry tomatoes, spinach, olive oil, and salt. This sauce is great with bread, pasta, or rice. Quick, easy, healthy, and delicious.
Ingredients
About 20-30 Cherry Tomatoes, cut in half
¾ to 1 Container of Fresh Spinach
1-2 TB of olive oil
1 tsp salt
Instructions
Heat the olive oil on medium low
Add cherry tomatoes and salt with half the salt, stir for 30 seconds
Add the Spinach and the remainder of salt, stir for a minute until spinash starts wilting
Stir often so spinach doesn't stick and tomatoes don't burn
Turn heat to low or simmer, and let the flavors come together
When done the sauce should be plenty of juice from the tomatoes
