Delicious Greek Salad

I made a Greek salad with tomatoes, cucumbers, red onion, kalamatas, beets, feta, croutons, and fresh dill. For the dressing, I whipped up a tangy vinaigrette with extra virgin olive oil, red wine vinegar, lemon, salt, and pepper.
Ingredients
  • extra virgin olive oil 3 TB
  • red wine vinegar - 3 TB
  • salt - to taste
  • freshly ground black pepper - to taste
  • 3 heirloom tomatoes - cut into chunks or wedges
  • 1 cup of washed bib or romaine, chopped
  • pitted kalamata olives sliced - ½ cup
  • 6 small beets, sliced thin
  • cucumber - 1, peeled deseeded and sliced
  • small red onion - ½, thinly sliced
  • feta cheese - ½ cup, crumbled
  • croutons ½ cup
  • fresh dill - 3 tablespoons, chopped
  • 1 lemon
Instructions
  1. In a small bowl whisk together the olive oil, vinegar, lemon, salt and pepper.
  2. In a larger bowl combine lettuce, tomatoes, cucumbers, beets, and onion, olives, feta, and dill. Toss with the vinaigrette. Add salt and pepper, and squeeze extra lemon if necessary.
  3. Top with croutons
