I made a Greek salad with tomatoes, cucumbers, red onion, kalamatas, beets, feta, croutons, and fresh dill. For the dressing, I whipped up a tangy vinaigrette with extra virgin olive oil, red wine vinegar, lemon, salt, and pepper.
Ingredients
extra virgin olive oil 3 TB
red wine vinegar - 3 TB
salt - to taste
freshly ground black pepper - to taste
3 heirloom tomatoes - cut into chunks or wedges
1 cup of washed bib or romaine, chopped
pitted kalamata olives sliced - ½ cup
6 small beets, sliced thin
cucumber - 1, peeled deseeded and sliced
small red onion - ½, thinly sliced
feta cheese - ½ cup, crumbled
croutons ½ cup
fresh dill - 3 tablespoons, chopped
1 lemon
Instructions
In a small bowl whisk together the olive oil, vinegar, lemon, salt and pepper.
In a larger bowl combine lettuce, tomatoes, cucumbers, beets, and onion, olives, feta, and dill. Toss with the vinaigrette. Add salt and pepper, and squeeze extra lemon if necessary.
Top with croutons
