Lime Chicken Chili Crockpot

We all had colds so I made a lime chicken chili in the slow cooker to clear things up. Slightly spicy, hearty, delicious chicken chili. The more lime the better! Enjoy with garnishes of avocado, sour cream, cheese, corn, cilantro, and tortilla chips.
Ingredients
  • 1 medium onion, chopped
  • 1 each medium sweet yellow, red and green peppers, chopped
  • 3 garlic cloves, minced
  • 1 rotisserie chicken, pull off light and dark meat from breasts, thighs, wings
  • 8 oz of low sodium chicken broth
  • 2 cans (14-1/2 ounces each) diced tomatoes, undrained
  • 1 can (15 ounces) white kidney or cannellini beans, rinsed and drained
  • 1 tablespoon ground cumin
  • 1 tablespoon chili powder
  • 2 teaspoons ground coriander
  • ⅛ teaspoon cayeenne pepper
  • 1 teaspoon grated lime peel
  • ½ teaspoon salt
  • ½ teaspoon garlic pepper blend
  • ¼ teaspoon pepper
  • Lime juice from one lime
  • Garnishes:
  • 1 avocado
  • 1 can corn
  • Sour Cream
  • Shredded pepper jack cheese
  • tortilla chips
  • lime juice from fresh limes
  • cilantro
Instructions
  1. Stir in all the ingredients to crockpot. Set to 8 hours on low. Stir once mid way.
