Easy Pan Fried Cod with Vegetables

I made a nice wild cod with fresh thyme and lemon sauce, then added asparagus to complete this flavorful, filling dinner.
Ingredients
  • two pieces (or 1 lb) of cod about ¾ inch thick
  • whole lemon
  • 1 TB fresh thyme
  • 3 cloves garlic crushed
  • ½ Tsp salt
  • ¼ tsp pepper
  • asparagus
  • 1 TB olive oil
Instructions
  1. Make a sauce of lemon juice, crushed garlic, fresh thyme, and salt and pepper
  2. Heat up olive oil in pan medium heat
  3. Add fresh cod and ladle sauce on top of fish
  4. Add asparagus to pan
  5. Lower heat to medium low and cover pan.
  6. Check in about 6 minutes, and make sure fish is cooked to 145 degrees.
  7. Fish is done in about 6-10 minutes total time.
