Homemade Chicken Salad with a Kick

I had a rotisserie chicken and some veggies in the fridge, so I figured why not make a chicken salad sandwich.I wanted to improve on what I don't like about most store-made chicken salads. So I used homemade mayo and less of it, lemon juice, and a touch of heat.
Ingredients
  • 1 rotisserie chicken, pull off chunks of white and some of the dark meat, and chop into bit size pieces
  • 1 stalk celery, cut into ¼-inch dice
  • 1-2 chopped leeks
  • ½-1 whole jalapeno minced
  • 1 cup homemade mayonnaise
  • 2 teaspoons strained freshly squeezed lemon juice
  • 2 teaspoons kosher salt
  • Freshly ground black pepper
Instructions
  1. In a mixing bowl, toss together the chicken, celery, leeks, jalapeno. Set aside.
  2. In a small bowl, whisk together the mayonnaise, lemon juice, salt and pepper to taste. Add to the chicken and mix gently until combined. Refrigerate until ready to serve.
  3. For sandwiches, slice some fresh bread, spread each side of bread with mayo, add chicken salad, add lettuce and tomato (add a touch of salt to the tomatoes)
