Miso marinated salmon is probably my favorite salmon dish right now. In general, you don't need strong flavors to accompany salmon, so the miso marinade gives the salmon a subtle sweetness that enhances your fish. Enjoy this salmon both in the oven or on the grill.
Ingredients
¼ cup miso (fermented soybean paste)
¼ cup mirin (sweet Japanese rice wine)
2 TB seasoned rice vinegar
2 TB minced green onions
1½ TB minced fresh ginger
2 TSP toasted sesame seed oil
4 (6 oz) salmon fillets, with skin
nonstick vegetable spray
Instructions
Whisk first 6 ingredients in a glass baking dish to blend for marinade. Add salmon; turn to coat. Cover and chill at least 30 minutes and up to 2 hours.
Preheat broiler (or grill). For broiler, line heavy large baking sheet with foil; spray with nonstick spray. Remove salmon fillets from miso marinade; using rubber spatula, scrape off excess marinade. Arrange salmon, skin side up, on prepared baking sheet. Broil 5-6 inches from heat source until skin is crisp about 2 minutes. Using a metal spatula, turn salmon over. Broil until salmon is just cooked through and golden brown on top, about 4 minutes. Serve over steamed jasmine rice.
